Tucked away under a railway bridge, our European Roastery is the place where our signature blend is born.
Gaetano is our Italian chief roaster and one of the select breed of devoted Master Roasters who knows our secret recipe. Like sommeliers, these experienced artisans follow strict rituals to ensure the consistency and quality of our blend. It might be that Gaetano and his team even dream about our coffee; that’s not for us to say. But we do know they live and breathe it.
The tools that roast our coffee are as important as the craftsmen using them. With that in mind, we only use high quality traditional Italian roasting technology to gently air-roast the beans and draw out their natural flavours time and time again.
Capturing the subtle flavour that makes our coffee so rich and aromatic requires a combination of expertise, method and instinct. Throughout the roasting process, we check each batch several times. This is known as the cupping process, a technique that draws heavily on the heightened senses of our master roasters – senses developed over many years and honed to perfection. Our team tastes every single batch of our coffee before it leaves the building and if it’s not perfect, it doesn’t.
These days, many long-established craft skills are being sacrificed in the name of efficiency. We are proud to employ the same traditional methods to create our unique roast as we did when we first set out. That’s because our objective – to create great coffee – hasn’t changed.
